What is Fermented Food University?
The Fermented Food University started in January 2013 in Kanazawa City, Ishikawa Prefecture. Ishikawa Prefecture produces unique fermented foods such as ishiruya, turnip sushi, and pickled pufferfish ovaries. However, due to the Westernization of modern food, traditional fermented foods and fermented seasonings are appearing less and less on the family dinner table.
